Ingredients
  

  • 1 lb (450 g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 (14.5 oz) can diced tomatoes
  • 6 cups beef broth
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried thyme
  • Optional: fresh parsley for garnish

Instructions
 

  • In a large pot over medium heat, cook ground beef until browned. Drain excess fat.
  • Add chopped onion and garlic; sauté until softened, about 3-4 minutes.
  • Add chopped cabbage, carrots, and celery. Cook for 5 minutes, stirring occasionally.
  • Stir in diced tomatoes, beef broth, salt, pepper, paprika, and thyme.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes, until vegetables are tender.
  • Adjust seasoning as needed. Garnish with fresh parsley before serving.

Notes

  • You can substitute ground turkey for a leaner option.
  • Serve with crusty bread or over rice for a filling meal.
