- 1½ lbs Boneless, skinless chicken breasts
- 4 medium Russet potatoes, peeled and diced
- 2 Carrots, sliced
- 2 stalks Celery, diced
- 1 medium Yellow onion, diced
- 3 cloves Garlic, minced
- 6 cups Chicken broth
- ½ cup Heavy cream
- 2 tbsp Olive oil
- 1 tsp Dried thyme
- 1 tsp Dried parsley
- 1 tsp Salt
- ½ tsp Black pepper
- 1 Bay leaf
- 2 tbsp All-purpose flour
Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for 4–5 minutes until slightly softened.
Add garlic: Stir in the minced garlic and cook for about 30 seconds.
