- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 chipotle peppers in adobo sauce, minced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lime juice
- Fresh cilantro, for garnish (optional)
In a small bowl, mix olive oil, minced chipotle peppers, garlic, paprika, cumin, salt, pepper, and lime juice.
Rub the mixture all over the chicken breasts and let it marinate for at least 15 minutes (or up to 2 hours in the fridge).
Heat a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until fully cooked (internal temperature 165°F / 74°C).
Remove chicken from heat and let it rest for 5 minutes before slicing.
Garnish with fresh cilantro and serve with your choice of tacos, rice bowls, wraps, or salad.
Notes
For extra smoky flavor, grill the chicken instead of cooking in a skillet.
Adjust the amount of chipotle peppers based on your preferred spice level.
