Ingredients
  

  • 2 pounds Yukon Gold or red potatoes
  • 6 slices bacon, chopped
  • 1 small onion, finely chopped
  • cup apple cider vinegar
  • 2 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoon chopped fresh parsley

Instructions
 

  • Boil the potatoes until tender, then drain and let them cool slightly. Slice or cube as desired.
  • In a skillet, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pan.
  • Add the chopped onion to the skillet and cook until soft.
  • Stir in the vinegar, sugar, and mustard. Simmer for 1–2 minutes to create the dressing.
  • Combine the potatoes, bacon, and dressing in a bowl. Toss gently to coat.
  • Season with salt and pepper, sprinkle with parsley, and serve warm.

Notes

  • For a stronger tangy flavor, increase the vinegar slightly. For a smoky boost, add more bacon or use smoked paprika.
