- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 28 oz (800 g) canned crushed tomatoes or fresh tomatoes
- 2 cups vegetable or chicken broth
- ½ cup heavy cream (or coconut cream for vegan)
- 1 teaspoon sugar (optional, to balance acidity)
- 1 teaspoon dried basil (or 2 tbsp fresh basil)
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
